One of my fondest memories as a child was coming together during holidays and enjoying a meal as a family. On Christmas mornings, my siblings and I would gather around my mother in the kitchen, and she would teach us how to make this recipe for breakfast pizza. It was a childhood tradition that dates back as far as I can remember, and one I looked forward to year after year. I enjoyed making these mini breakfast pizzas, not only because they are so delicious, but because of the quality time I was able to spend with my mom.
My love for food truly began on those Christmas mornings. I realized how food consistently had a way of bringing everyone together, to celebrate and share joy with one another. Today, I love to re-create that feeling, by hosting my own family gatherings and cooking with my 3 children.
This recipe is so quick & easy and all of my kids absolutely love helping me make it. If you are looking for a perfect idea for Mother’s Day, these breakfast pizzas are a fun way to give children a hands-on experience in making a gift for Mom, while giving her time to sleep in or relax.

Mini Breakfast Pizzas
ingredients
Pork Sausage Roll - 16oz
Brick Cream Cheese -8oz
English Muffins - 6pk/12oz
Shredded Cheese of Choice - 8oz
Bell Peppers (Green, Red & Yellow)
½ cup chopped Parsley
instructions
Pre-heat oven to 375 degrees
Brown sausage over med-high heat
Drain fat
Mix in brick of cream cheese
Chop peppers into dime size pieces
On a baking sheet, layout english muffins halves open faced
Scoop layer of sausage cream cheese onto each English muffin
Sprinkle a layer of shredded cheese on each
Use the chopped peppers for the toppings
Sprinkle with chopped parsley
Bake for 10 minutes
Let cool and enjoy!
