I was never a great cook until I met my fiancé, who has taught me so many new recipes and techniques. Because of those lessons from my fiancé, my confidence in preparing food has grown exponentially, and I now I can even say I’m pretty good at it!
I take pride in my signature Creamy Tuscan Chicken dish, because it was the first tasty meal I perfected and shared with my loved ones. My friends and family love it and always ask when I’m going to make it next.
I’ve found that It is a great substitute for Thanksgiving or Christmas dinner. It’s a the kind of go-to meal that will satisfy any food-lover, and I just love how the flavors all blend together. A meal that is simple yet filling is always 5-Star, in my book.
Creamy Tuscan Chicken
ingredients
4-5 Bone-in, Skin-on Chicken Thighs
1 Tsp Salt (For Chicken)
1 Tsp Pepper (For Chicken)
1T Avocado Oil
3-4 Cloves Garlic (Chopped)
1/2 Onion (Diced)
1 Tomato (Diced)
2 C Spinach
2 C Heavy Cream
2-3 Tsp Cajun Spice
2-3 Tsp Garlic Salt
1-1/2 C Grated Parmesan Cheese
1 T Green Onion (Chopped)

Season chicken all over with salt, pepper, cajun and garlic salt
Heat the avocado oil in a skillet over medium-low heat
Place the chicken thighs skin down in the skillet and cook for about 13 minutes to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
Flip the chicken, then cook for about another 15 minutes, until the chicken is cooked through. Remove from pan.
Add the diced garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted.
Add the heavy cream and bring it to a boil
Add the parmesan cheese, keep stirring until the sauce is thickened slightly.
Place chicken back in the pan, spooning the sauce on the top of the chicken.
Finish with garnishing the chicken with the chopped green onions.
Perfect Sides
Cajun Green Beans – Place a can of french styled green beans in small pot. Add 1 or 2 tablespoons of cajun spice. Add 1 or 1 ½ tablespoons of butter. Place lid on pot. Put heat to medium and when the butter is melted, place heat on low.
Ranch-Garlic Mashed Potatoes – Peel potatoes and have a pot of water ready to boil as you peel. Wash the potatoes then slice in half. Once the water begins to boil, add the potatoes to the pot. Boil for 30-35 minutes. Drain. Put potatoes back in pot. Add 1 to 1 ½ cup of ranch dressing and add 1 tablespoon of garlic and salt. Mash it all together and add anymore ranch if desired.
